I know lead has been used historically as a metallic drier but now other metals are used for this function. Although I don’t know how you would document for the regulators, or any legal issues, what particular finish or finishes you used. If that can't be, then perhaps they can release lead test kits like they did when china dishes were the concern for lead content. Again, I'm not sure how the test results of individuals testing the lead content of their finished wood piece(s) would be validated and documented, but I'm sure they could work something out. Just my two cents as far as the replaceable knives go, a buddy of mine has those and I have resharpenable ones, we compaired costs a while back and found that at least in our area (rural Mn.) it is way cheaper to resharpen.
