Just had to comment on something Mr. Berger said in the above video:
Chef’s most certainly do NOT use their fingernails to guide a knife!
Proper form is to curl your fingers in under your palm in what’s commonly referred to as “The Claw”, letting the knife ride along the flat of your finger between knuckles.
